Well we did another competition on our FE1000pc. It was way too hot 100 deg with high humidity. The grill functioned flawlessly. Were as the senior members of our team embarrassed themselves the junior members did well. The two boys hit first and second place  in the kids Q. Prize money was 175 for the oldest and 100 for the youngest. They were both way excited. The oldest did inside out bacon cheeseburgers and the youngest did the California hamburger dip. The both were on top of the world until bed time last night. Everytime we compete we are amazed at this grill. It is such a versatile grill!

As an added bonus We met Stuart from Cookshack. Decent sort of fella!

The older boy (8 years old) said that he would share his secret with me for $200. I know his mom so she let me in on his secrets. His big secret was to use fresh tomatoes out of dad's garden. These are both recipes that are good for younger folks. The older boy was able to make the patties himself. I cut the cheese to minimize the risk with a knife. His safety knife just would not cut it. He was also able to flip the burgers with a little help. The dip was especially easy for the little one (5 years old). He was able to help browning the meat and mixing it up before during and after cooking. We had great fun. I'll also post these in the recipe section.


Inside out bacon cheeseburgers

1 lb Ground burger (makes two half pound burgers)
precooked bacon
Weber's gourmet burger seasoning
Colby cheese (Kraft makes it in the round form that is about 2 inches across packed in clear wax, we used that for the higher melting point and the easy size)


Divide burger into 4 equal portions and season with the Webber's. Make 4 patties.  Cut the cheese into slabs about 1/4 inch or a little less. Put one slice of cheese and some bacon on a burger and then put a second burger on top. Make sure to seal the edges up good so the cheese doesn't run out.

Cook at 350 over direct heat for 3 to 4 minutes then flip, cook another 3 to 4 minutes. Move the burgers to the indirect side and let them finish cooking. We probe ours looking for 170. Make sure if you probe to keep the probe in the meat. If you get into the cheese the burger might spring a leak. Some garden fresh tomatoes slices on a fresh bun and you have a little slice of heaven.



California Dip

2- 8oz packages of cream cheese-cubed
1.5 cups grated Cheddar cheese (my wife uses 4 cups)
1- 12oz jar salsa
1 small can chopped black olives
1 can chili (with or without beans)
1 small can chopped green chilis (drained)
1/2 cup sliced green onions
1 lb ground beef browned and seasoned to taste (our modification not in original recipe)

Arrange ingredients in casserole dish (9x13) in order listed.
Bake at 350 for 35 to 45 minutes. Stir after 25 minutes to blend the stuff good. Depending upon the size of cubes of cream cheese you might need to stir a couple of times.

We did these in the FE 1000pc and it turned out great.
